France, this renowned pastry made of egg whites and sugar is known by the somewhat suggestive name of "baiser" meaning "kisses". In Switzerland, the same sweet pastry is simply named "meringue" after its place of origin, the town of Meiringen. It was there that a pastry chef named Gasparani, most probably an Italian immigrant, created the meringue around 1600. |
